Bluebell Falls – award-winning artisan cheese from County Cork
Bluebell Falls Artisan Cheese is since 2003 a multi award-winning handmade, soft cheese made from goat’s and cows milk with a deliciously creamy taste and texture. This 100% Irish product is produced close to Charleville in County Cork, well-known for the production of great tasting cheese. Our goats cheese is a very healthy product with less than 1% salt and twice the protein and half the fat compared to cow’s cheese.
This traditional artisan family business produces artisan cheese to the highest quality standards in our BRC graded production facility with quality control with full traceability of all ingredients to the highest global standards.
Making our cheeses is a traditional natural process, with milk transferred direct from the milking parlour to the dairy each day. Milk is chilled, pasteurised, and made into curds with vegetarian rennet. Once set, the curds are hung to strain for several hours in natural muslin bags, before the cheese is salted, rolled into a traditional log shape and hand packed.
All these factors, plus the fact that our goats are grazing freely on grass and wild shrubs on the family farm as well as the diversity of breed, and careful cheese making techniques, give Bluebell Falls a delicate milky taste and creamy consistency.
